24 Healthy Winter Salads to Make in January 🌟


Happy New Year Reader,

I hope you had a great holiday season!

My December was great! It was super busy with work, preparing for the holidays, then time celebrating with my family and friends.

My oldest daughter came home to spend the holidays with us. It was super nice to hear my three daughters hanging out and giggling together. The sound of their laughter and excitement for Christmas made my heart swell.

We hosted a nice Christmas at home together, then in those days between Christmas and New Year's my husband got away to Las Vegas where we had gotten married for our 20th wedding anniversary trip. It was the first time we've gone on vacation just the two of us in 10 years!

Then...

and now!

We stayed at Harrah's and went to the Sphere, rode the High Roller, visited the Neon Museum and Fremont St., saw the Vegas Golden Knights NHL hockey team beat the Calgary Flames at T-Mobile arena and played the slots (we got lucky and broke even). We were back from our vacation in time to celebrate New Year's at home with our friends and family where we dressed up as Taylor Swift and Travis Kelce for the annual NYE party.

Do you also feel like December was one long party?

I admittedly indulged in a lot of processed food, sweets and alcohol. While it was fun, I'm looking forward to getting back to routine.

I was an avid runner before COVID but have gotten away from it. My doctor tells me that I should get more exercise and work towards lowering my cholesterol, and blood pressure. I personally also want to increase my muscle mass, decrease my body fat percentage and lower my resting heart rate. This year you'll see me sharing more of a glimpse into my personal life and my health journey in my instagram stories and future emails. I'd love it if you would follow along and also share your journey with me.

This brings me to the real point of this email... January salads!
